Chicken and Mushroom Soup.

4 chicken breasts, washed and thinly sliced.

7 mushrooms washed sliced (3 slices per mushroom).

3 spring onions, stripped of old leaves and sliced, set aside dark green leaves.

1 chicken stock cube.

1 vegetable stock cube.

2 1/2 pts water.

tsp soy sauce.

Vegetable oil.

Dried mixed herbs.

1. Cook chicken in large pan with drizzle of vegetable oil oil.

2. Add water, mushrooms, white spring onions, bring to the boil add stock cubes, bring to boil then, simmer for 1/2 hour add herbs. Add soy sauce, serve.
